So last week was the pinnacle of my cooking career. I cooked a whole 7 days out of the week. I don’t think I’ve ever done that before. Can I get a round of applause or what?!
Just kidding, don’t applaud me for doing a completely ordinary task that my adult-ish self should be doing anyway, but I figured I’d share what it was exactly that I made.
Monday
This was Jay’s absolute favorite but also mine too. I mean it was all protein and carbs so what wouldn’t we like? Admittedly, I didn’t have any Old Bay Seasoning that the recipe calls for so I concocted my own mixture of spices from the pantry but it was absolute filling and delicious.
Tuesday
These were all right. Again, I had to put my own spin on things because Stop & Shop doesn’t sell any Old Bay Seasoning or any Blackened Seasoning, or any Tilapia, so I bought Cod and made my own mixture. The fish tasted great, but the purple lettuce I bought just didn’t taste the same as the one we get served at restaurants. Also, the chipotle mayo sauce was a no go for me.
Wednesday
Korean Beef w/ Cauliflower Rice
Jay and I differ in opinions on this. He loved it as a whole. I loved the beef, despised the cauliflower rice. I think I just have a serious issues with vegetables. I’ve always been under the opinion that they are purely decorative, but under the guise of having at least one healthy meal a day, I gave it a shot. Next time I’ll just have it with regular rice.
Thursday
Salmon & Asparagus
I don’t have a picture of my own for this because there was nothing special about it. It’s just always my go to for when I want something super easy and super quick to make. I season the asparagus with olive oil, chili powder, salt & pepper. Same goes for the Salmon and I wrap it in a foil wrap to keep the moisture inside. I put both in the oven at 350 degrees and it’s good to go in about 20 minutes.
Friday
Garlic Butter Meatballs w/ Lemon Zucchini Noodles
Again, there was a love hate thing with this meal. We both despised the zucchini noodles, and absolutely devoured the meatballs. Out of everything I made, this took the longest to make. The meatballs were obviously made by hand and they were just SO good. I cannot even begin to explain. The recipe had me cook them on the stovetop with butter so that I could keep basting them with the mixture. I think I would’ve gotten the same effect at a shorter time if I baked them like Jay suggested. Either way, neither of us touched the Zucchini noodles. Those should just be a sin.
Saturday
Jay liked these so much we made them again on Saturday. Aside from how much the ingredients cost, these might just be our go to, especially with the colder months coming in. I do think they’d be great if they were grilled though, but unfortunately the weather hasn’t held up over here so we could barbecue.
Sunday
Homemade Hot Pot
Again, sorry I don’t have my own picture on this. We’ve both been a huge fan of hot pot since the beginning of our relationship and we had a place down the street from us that we’d go all the time until we realized how much we were spending and decided to do it at home. It comes out differently every time because we can’t read the broth packaging but we still haven’t had a bad meal yet.
There you have it, 7 days worth of home made meals. Two of them my own. I think that’s just a record and I couldn’t be more proud. Yay me!
