I’m still working on my motivation to cook throughout the week. I’ve been open about my laziness to cook from the very beginning. So far I’ve been fortunate enough to not have the need to cook with all of these delivery apps, but with the way they’re increasing these fees it’s gotten less appealing. Plus, it’s getting close to Christmas so it’d be wise for me to cut back on spending.
I’ve been making it a point to cook at home at least four out of the seven days. Typically, I hate chicken so I tend to avoid making it. However, I’ve been attempting to make the perfect teriyaki mixture for quite some time, going through many different recipes on Pinterest until I finally found the perfect one from ModernMealMakeover.com.
This recipe was literally the best and the greatest part about it was how easy it was. You just mix everything into a bowl, cook the chicken, throw the mixture onto it and let it simmer for five minutes until the sauce thickens, then VIOLA. Ready to serve.
The Best Chicken Teriyaki Rice Bowl
I made a few changes to the recipe just to add a bit of personal flavor. Before cooking the chicken, I seasoned it with pepper. I swapped out the rice vinegar with apple cider vinegar (same measurement) because I don’t have any rice vinegar. Lastly, I added the 1/2 tsp. of sesame oil as well as 1/2 tsp. of chili oil to give it a bit of a kick because I always need a bit of spice in my food.
