Easy Peasy Eggs in a Mug

On my many breaks from cooking but not wanting to order out, I have managed to comb through almost all of Pinterest of small things to make that take less than five minutes of my time. One of those things ended up being Eggs in a Mug. Now for some, this may be a no-brainer, but for some, this may be a life saver.

Things “in a mug” tend to be some of my favorite go-to’s, for example – Brownie’s in a mug. I have yet to find a recipe that comes out tasting that good, but I did find a mixture from the grocery store that I always keep in the house along with whipped cream and a carton of ice cream.

Sorry if I just sidetracked. I just had it last night for a small cheat meal and it’s all I can think about, but I have to stay disciplined today! 🙁

Anyway, recipes for things in a mug are perfeccccct for people who don’t want to put a ton of effort into their meal or if they don’t have a lot in the house and want to whip something together. This 2 minute egg recipe is the one I use the most. Especially on Sunday’s when Jay’s at work and I don’t want to make dishes.

The steps are super easy.

  1. Find a microwaveable mug and spray with a small amount of Pam
  2. Add between 1 – 3 eggs
  3. Season with salt, pepper, and anything else you’d like to add (sometimes I throw in chilli powder or small bits of Ham)
  4. Scramble the eggs
  5. Cover and microwave for 40 seconds
  6. Take out and scramble again
  7. Cover and Microwave for 1 more minute

It might not look as pretty as making it on a pan, but the taste is just as good. Once you take it out you can add whatever you like on it. I usually have it with green onions and a little bit of hot sauce.
