So on a late night snapchat food-porn binge, I was obviously having major desert cravings. Ever since we’ve been meal prepping we keep very little food in the house because we buy everything specifically for the meals we’re making for the week. This has kept us well on track with our diet and weight loss but sometimes you just HAVE to give in.
Welp, I was lucky enough to go through Tasty to find this recipe for no bake, minimal ingredients required dessert and decided to give it a shot.
I have to tell you it was so incredibly easy. Sticky – god it was so sticky – but easy and tasted amazing.
Ingredients:
- 1 ½ cups Peanut Butter
- ⅓ cup Honey
- ¾ cups Oats
- 1 bag Mini Chocolate Chips (½ cup for mixing and 1 – 2 cups melted)
Steps:
- Mix together peanut butter, honey, oats, and ½ cup mini chocolate chips.
- I used regular chocolate chips because those were the only ones I had in the house and it was waaay to much. If using the regular sized ones, go down to ¼ cup.
- Roll into balls and freeze for 20 minutes
- While the balls are in the freezer – melt 1 to 2 cups of the chocolate chips.
- Take balls out of the freezer and one by one roll them until fully covered in the melted chocolate, returning them to the pan.
- Refrigerate for 20 minutes
I’m telling you, these hit the spot. I have no idea how many calories it is per ball, but as long as you have things in moderation, it won’t break your diet.
These might just be a recipe I keep in my brain bank to make for my kids one day – but for now, Jay and I will enjoy them just the same. 🙂
